Groene curry pasta

1 tbs. Kaffir lime leaves
5 tbs. Shallots
1 tbs. Coriander seeds
5 tbs. Diced garlic
1 inch cube galangal or ginger, diced
2 long green chilli's
10 small green chilli's
3 Coriander roots
1/3 tbs. Cumin
3 tbs. Lemon grass
1/2 tbs. Black pepper
2 tbs. Shrimp paste


  • Grind seeds and dry herbs with a mortar and pestle.
  • Add coriander roots, lemon grass, ginger and so on, leaving the shrimp paste for last.
  • This curry paste will last for months if refrigerated.
